He is a graduate of the LaVarenne cooking school in Paris, and specializes in choice beef dishes, fresh fish, poultry, and wild game. Some specialties include Monterey fish stew, pistachio nut-crusted rack of lamb along with a creative and interesting blend of meat and vegetarian fare accompanied by a wide variety of pasta dishes.
